Cora Cooks Pancit

We cooked pancit.
We fried lumpia.
Our house embraced Fillapino food for the evening.
I was exhausted after I cooked.
I now understand why Cora's mother gives all the children a job to do during the cooking.
There's a lot to prep.
A lot.
It almost made me consider adding some more children to our family.
There certainly was enough food for 5-6 more children.
And then my brain restarted.
Thank God for that.

working on the list part four

so i lost my camera charger, {again} and my lovely battery is d.e.a.d.
thank goodness steve has an iphone with camera while i wait for a replacement charger. {sheesh}

so we are still working on our summer LIST.
this falls under the category of NEW RECIPE PER WEEK

Tonight we made Leesa's Quinoa Salad.
So easy. 
So delish.
Even Steve liked it.
Zach ate it by the handfuls (literally)
Macy, not a huge fan...(she's awfully picky these days)
Here's the recipe for you to try:

2 cups of Quinoa (or couscous)
4 cups chicken stock
1 cucumber (chopped)
4 green onions (chopped)
handful of fresh basil
1 container of cherry tomatoes
8oz of tomato-basil feta cheese (i just used regular)
1/4 c of Newman's Tuscan Italian Dressing (we used Annie's)

Boil chicken stock. Add rinsed quinoa. Return to a boil. Cover and reduce heat to low. Cook 15 minutes. Let quinoa cool and add the rest of the ingredients!



Macy and I read a fabulous book last night called Cora Cooks Pancit by Dorina K. Lazo Gilmore.
Macy begged to try the recipe at the end called Lolo's Pancit Recipe.
We are going to make it tomorrow.

We decided to pair the Pancit with some Fillapino Lumpia, which we made tonight so I don't have so much to prepare tomorrow.

It's HOT in Cali...

seriously.
hot.

Today we cooled off with a swim in Oma & Opa's pool...
and then headed to Cali's Frozen Custard to further cool our jets.

but seriously.
it's still hot.
