Kousa's what we had for dinner a few nights ago.

Sounds a little suspect though, doesn't it?
There was no way I was serving "Kousa" to a 5 and 2 year old.
So they were renamed.
And more importantly, they were EATEN.

Let me warmly introduce you a Lebanese favorite of mine:


these are so simple.

Here is my recipe to make 4 beef boats.

2 large lebanese zucchini cut in half and seeds scooped out.
1 cup of cooked rice.
1 lb of ground beef or lamb (we used beef)
1/2 onion finely chopped
2-3 fresh tomatoes
1/2 jar favorite spaghetti sauce
parmesan cheese

Mix in a bowl with your hands:
beef, cooked rice, pepper, cinnamon, salt and allspice to taste, and onion.

Lightly stuff into squash.
Top with fresh cut tomatoes and drizzle with spaghetti sauce.

Place in a glass baking dish with a small amount of water covering the bottom.

Cook at 350 in the oven until beef is cooked through and squash is tender. (approx. 35-40 mins)
Remove from oven.
Top with grated parmesan cheese.

i am joni lane and i think food should not have scary names that sound like a kissing disease.
